I recently saw a chess match being played. After a few moves, Black was to move, and the board was exactly as at the beginning, except that the white king rook (at h1) was missing. How did Black capture it -- specifically, what was the actual move?

The idea is right, but for the solution we have to consider that the black knight couldn't get to d3 or f3, for that would be check. The white knight couldn't get to d6 or f6, for the same reason.
A set of moves that satisfies the conditions of the problem would be:
Nf3 Nf6
Nd4 Ne4
Nf3 Ng5
Rg1 Ne6
Nd4 Nf4
Nf3 Nh3
Nd4 Ng1
Nf3 Nh3
Nd4 Nf4
Nf3 Ne6
Nd4 Ng5
Nf3 Ne4
Nd4 Nf6
Nf3 Ng8
Ng1 -
