Letters that are doubled when these can be written without  lifting  the pencil off the paper are:

B, C, D, I, J, K, L, M, N, O, P, Q, R, S, U, V, W, Z

Letters that are not doubled when these cannot be written without lifting the pencil off the paper are:

A, E, F, G, H, K, T, X, Y

Writing the letters in alphabetical order, the letter Z comes after Y.

Since Z is doubled when lifting the pencil off the paper, we observe that the required missing term is ZZ.
