Can the omnipotent God create a stone which he(she?) him(her?)self Cannot carry?

What is "the omnipotent God"? It is a concept in the minds of humans.
What is a concept? It is a chemical reaction in the human brain.
Can a chemical reaction create a rock that it cannot carry? ...

Here is my real answer to the question though:
The omnipotent being(be it the God or a god doesn't matter to the question so long as it is omnipotent) can create the rock which it cannot carry. Then it can carry the rock which it cannot carry. Why? Because included in omnipotence is the ability to contradict one's own omnipotence.
...duh!
