The answer is music.
"From wood it's made" - there are instruments made of wood
"From string it's made" - guitars, cellos, or violins, probably
"It floats upon the winds" - you can hear it due to vibrations in the air
"It's made by one, it's made by many" - one or many people at once can play music
"From hands and mouths it spins" - you can play an instrument or sing; it's still music
"A score without a game" - a music director or conductor has a score that shows all the notes in a piece of music
"A staff not for the lame" - written music is usually written on a staff
"With seven letters tamed" - notes in music are named A, B, C, D, E, F, and G
"With five letters named" - M-U-S-I-C
This was very easy for me because I study music and hear terms like "score" and "staff" almost daily.
