As the previous comments point out, there must be an attraction of some sort.  My guess is surface tension.

From experience, if the water is turned up higher the spray is in a fan or cone shape. 

If the force is uniform towards the center line, the 'natural curve' would be a parabola, but I doubt it is this simple.  That said, I don't have a feel for how it would be un-uniform.  Would the force be more or less as the water gets farther from the center?  I don't know.
