Liz lies on one day of the week. One day, Liz said, "Today is Tuesday." The next day, she said, "Today is Thursday." What day does Liz lie?

Let us assume that Liz lied on Day one, and told the truth on Day 2. Then, it follows that Day 2 is Thursday and Day one is Wednesday.
Let us assume that, Liz told the truth on Day 1 and she lied on Day 2. Then, it follows that: day one is on Tuesday and Day 2 on Wednesday.
Consequently, on a Wednesday -  Liz always tells a lie, because its her lying day.
