No, God cannot create a stone that He is incapable of lifting.  Yes, God can limit His capabilities if it is necessary for His objectives.  This was done when He (as Jesus) came to earth as a man.  His objective was to take our place in death and provide a way for our sins to be forgiven.  As God, He cannot die.  But He limited his omnipotence as a man to fulfill His objective of dying.  So...yes, He could limit His omnipotence to be incapable to lift a stone if it was within His character and necessary for His objective.  As a man [Jesus] there were many stones that He would have been incapable of lifting.
