Grouping the numbers before conversion to letters:
3, 1, 2, 12, 5  := CABLE : thick rope of twisted hemp or wire
3, 12, 1, 25  := CLAY : heavy, sticky wet earth

Allowing for the rearrangement of the digits before grouping and conversion to letters:
3, 5, 12, 12  := CELL : basic structural unit of an organism
3, 12, 21, 5  := CLUE : evidence that helps to solve a problem
12, 1, 3, 25  := LACY : of or resembling lace
12, 15, 23  := LOW : without great height; to moo
15, 23, 12  := OWL : a nocturnal bird of prey
23, 1, 12, 1  := WALE : a skin welt
25, 21, 13  := YUM : interjection expressing satisfaction

Less than common "anagrams":
1, 12, 5, 23  := ALEW : halloo [archaic]
