How many relatively common singular nouns can you think of that, when you remove an "s", become a relatively common plural noun?
For example: PRINCESS (singular) becomes PRINCES (plural).
I know of at least four more, one of which only has one "s" to begin with.

BRASS BRAS and CARESS CARES are two of the pairs of words I found, as well.
I point out that the stipulation posed by the puzzler is that each word of the pair must both be nouns (though the spellings may also represent other grammatical forms: verbs, adjectives, adverbs, pronouns, etc.). Therefore, the word pairs with the singular words NEEDLESS, POSSESS and ASSESS must be discounted as they fail in this regard.
