The word Tallahassee begins with a capital T and ends
with a small e.

If the word Tallahassee were replaced by the word Texas could the above sentence still be true?

If the replacement were made, it would no longer be the exact sentence shown. The sentence shown would still be true.

However, this gets into the question of identity. If planks are replaced on the historical ship Constitution (old ironsides), and then more planks and other items, eventually nothing is left of the ship. Is it still the same ship?

If we modify the sentence in such a way as described, is it still the same sentence? ...physically if we make the modification amid the on and off bits that we leave alone? ... conceptually, which is a new and changed-meaning sentence?
