Can the omnipotent God create a stone which he(she?) him(her?)self Cannot carry?

The "riddle" is about omnipotence.
According to your logic, God can lift any stone he can create. But there are 2 actions we are asking if he can do. 1) lift any stone AND 2) make a stone that he cannot lift.
God must be capable of doing both things otherwise he is not omnipotent according to the "riddle".
Personally, I like the Numbers 23:19 answer.
