Rime. Rime is another name for crust. Crust stops bread's spread. You walk on Earth's crust. Rime "flipped over" is emir, which is the name of a highly venerable person in the Middle East. However, the alternate solution "pie crust", first suggested here by Charlie and elaborated on by others, also appears to be a good solution.
